Le Château de la Pioline
Once a 14th-century mill, the Moulin de Verdache, and transformed over the centuries into a sumptuous 16th-century residence, it is today a hotel and restaurant. The Château de la Pioline has been listed as a Historic Monument since 1976, and since 2016 chef Pierre Reboul, Michelin-starred since 2003, and his team have taken over the château's vast spaces in Aix-en-Provence.
At Pierre Reboul's table, dishes change with the seasons, with produce deliveries, and also according to his imagination and inspiration. Yet for 20 years, one dish has stayed on the menu without interruption: refined, reworked and perfected over the years, it is today a menu staple and a favourite among regulars and curious newcomers alike: Pierre Reboul's foie gras flamby. This dish is a creation in his own image, bold and indulgent, playful and childlike in form, a play on temperature between a foie gras royale and warm caramel, a perfect balance of sweet and savoury.

La Villa Gallici
La Villa Gallici, an Aix bastide dating from the 18th century, is located in the centre of Aix-en-Provence and invites you to its gourmet restaurant. In the shade of the plane trees, you can savour seasonal cuisine inspired by Provence and Italy, exemplified by its signature dish: homemade ravioli vitello tonnato style, marinated confit tomatoes with olives and capers, lemon pepper and Parmigiano Reggiano.

La Villa Saint-Ange
A chapel and convent before the Revolution of 1789, the building that today houses the Villa Saint-Ange has kept all its stateliness and elegance. Through the wrought-iron gate, you can glimpse the garden adorned with statues, cherubs and fountains that grace this hôtel particulier, with its ochre-yellow tones so characteristic of Aix-en-Provence.
